Zucchini -Egg Tortilla


A mixture of beaten eggs with cooked zucchini is scrambled, spooned atop tortillas and topped with cheese. It's then baked to crisp the tortilla.



Ingredients:

  • 2 large zucchini
  • 6 eggs
  • 1 cup cheese (feta, cheddar, edam)
  • 1 Tbsp olive oil
  • 4 tortillas
  • Salt and pepper, to taste

Method

Dice zucchini (with skin on) and saute in olive oil until tender and just starting to brown. Beat eggs; stir in zucchini, salt and pepper. Scramble the eggs in a skillet. Spoon mixture on top of tortillas on a cookie sheet, and then top with cheese. Bake about 15 minutes at 350 degrees until shell is a bit crisp.

Notes: The zucchini and egg is a Greek breakfast dish. I gave it a Mexican twist and it's delicious.
