Waldorf Turkey Salad

This main dish salad combines diced cooked turkey with apples, celery, red onion and toasted walnuts, in a mayonnaise and sour cream dressing with smoked paprika.
Ingredients
- 2 lbs. roasted turkey, medium dice
- 2 or 3 red apples, medium dice
- 2 Celery stalks, small Dice
- 1/2 to 1 red onion, small dice
- 1/2 Cup walnuts, toasted and chopped
- DRESSING:
- 4 oz mayonnaise
- 4 oz sour cream
- Juice of 1/2 lemon
- 1 tsp smoked paprika
- Salt & pepper to taste (about 1/2 to 1 tsp each)

Method
For dressing, combine mayonnaise, sour cream, lemon juice and paprika in a medium bowl; whisk until blended. Taste and season with salt and pepper. For salad, place turkey and apples in a large mixing bowl. Add remaining ingredients and stir in dressing. Chill in refrigerator until serving time.
Notes: Great for a sandwich on two slices of toasted sourdough bread, or as a salad on your favorite bed of greens.
