Unbelievably Good BBQ Wings

These chicken wings are seasoned and cooked twice. They're baked in the oven and then deep fried in oil.
Ingredients
- 2 lbs chicken wings, separated into sections
- 2 tbsp cooking oil
- Equal amounts of --
- Lawry's seasoned salt, Kosher salt, Granulated garlic, and Coarse ground black pepper
- Cooking oil for deep frying
- BBQ sauce or hot sauce of choice, if desired

Preheat oven to 350 degrees. Place wing sections in baking dish and pour cooking oil over wings. Using a plastic spatula or spoon, stir wings until they are evenly coated with oil. If you have gloves you can use your hands to stir through the wings to coat them evenly. Season with a mixture of equal amounts of Lawry's, granulated garlic, kosher salt and coarse ground black pepper. Cover pan tightly with foil. Bake on center rack for 20 minutes at 350 degrees. After 20 minutes, remove foil and bake for 20 minutes, uncovered, at 350 degrees. Remove from oven and carefully drain fat from wings, then deep fry in cooking oil until they float approx 4-6 minutes at 350 degrees. Once wing sections float remove from fryer, allow a minute or two to drain and toss lightly with your favorite BBQ sauce, or hot sauce.
Notes: I came up with this three step recipe to produce a more succulent, tender product. Wings go well with BBQ or hot sauce. Or serve with celery and carrot sticks, the old standby, and blue cheese dressing.
