Twisted Scrambled Eggs

Corn tortillas and eggs make a light breakfast, lunch or dinner.
 

Ingredients

  • 6 eggs
  • 2 tbsp milk
  • Butter
  • 6 corn tortillas
  • Salt and pepper to taste

Method

Heat butter in a large skillet. Cut tortillas into triangles, spread in a single layer over butter, and fry until crispy on both sides. Meanwhile, scramble eggs in a bowl with milk. Pour over crispy tortillas in skillet. Lift tortillas with spatula to make sure mixture covers tortillas. Turn to fully cook both sides. Salt and pepper to taste.

 

Notes: This recipe works well with leftover meat such as pork or beef. Simply add diced meat to egg mixture before pouring over tortillas. We eat this with chilled peaches.
