Tomato and Broccoli Quiche

Broccoli, cheddar cheese, sliced mushrooms & herbs are baked in a pie shell with an egg & milk mixture that's topped with sliced tomatoes.
Ingredients
- 1 9-inch prepared pie shell
- 1 cup chopped broccoli
- 4 eggs, beaten
- 1 1/4 cups milk
- 2 tablespoons butter, melted
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground pepper
- 1 cup shredded cheddar cheese
- 1 cup thinly sliced fresh mushrooms
- 2 tablespoons minced fresh cilantro
- 1 tablespoon minced fresh basil
- 1/4 cup finely chopped green onions, optional
- 3 medium tomatoes, sliced

Preheat oven to 375 degrees. Bake pie crust for 7-10 minutes until bottom is slightly browned, then let cool. Steam broccoli until tender. In large mixing bowl, combine milk, eggs, butter, flour, salt, pepper, and 1/2 cup of the cheese. Whisk until well blended. Sprinkle remaining cheese over crust. Layer broccoli, mushrooms, herbs and green onion (if using) on cheese. Pour liquid mixture over all. Arrange sliced tomatoes on top. Bake 35-45 minutes or until a knife inserted in the center comes out clean.
Notes: Nice brunch food.
