Swiss Squash Fritters

Cooked and drained summer squash is combined with eggs, Swiss cheese, ground pecans, & seasonings, and fried as fritters.
Ingredients
- 2 cups mashed cooked yellow squash
- 2 large eggs, lightly beaten
- 1/4 cup seasoning blend (onions, celery, peppers and parsley)
- 1 teaspoon ranch salad dressing mix
- 1/2 teaspoon white pepper
- 1/2 cup ground pecans
- 1 cup shredded Swiss cheese
- Vegetable oil for shallow fat frying

Method
Combine first 7 ingredients. Heat oil to 375 degrees in a large skillet. Drop batter into hot oil by the Tablespoonfuls. Fry until golden brown. Drain on paper towels.
Notes: Easy and yummy.
