Super French Onion Soup

This French onion soup contains both chicken and beef broths plus white wine, and is flavored with soy sauce, Worcestershire and basil.
 

Ingredients

  • 1/4 stick (2 Tbsp.) unsalted butter
  • 2 tablespoons vegetable oil
  • 4 lbs. onions, sliced thin
  • 1 tablespoon fresh basil
  • 1 tablespoons Worcestershire sauce
  • 2 tablespoons soy sauce
  • 2 cups dry white wine
  • 3 cups chicken broth
  • 3 cups beef broth
  • 1 teaspoon salt and pepper, or to taste
  • Croutons
  • Sliced round provolone cheese

Method

Melt butter in a stock pot then add oil. Add onions, basil and Worcestershire sauce. Cover and cook until softened and carmelized, stirring occasionally, about 30-45 minutes. (If mixture begins to stick to the pan too much, slowly add more butter or oil.) Mix in soy sauce. Add white wine slowly, stirring as you go, and bring mixture to a boil, scraping up any browned bits. Add chicken and beef broths; let soup simmer, uncovered for an hour and a half, gently stirring. Season with salt and pepper. To serve, place hot soup in a bowl and drop croutons on top to cover surface area. Place a slice of provolone cheese on top of this and broil soup for a few minutes, or microwave just enough to melt cheese. (Use heat-proof or microwave-safe bowls, as necessary.)

 

Notes: This soup has a very decadent flavor. I like to cook it for my sweetheart on a cold February Valentine's Day, as the perfect compliment to a steak dinner. This recipe is also nice for company. You can freeze any leftover soup in small portions to use as a base for roasts or to flavor other red meat dishes.
