Spinach Omelet

Turkey bacon and egg substitute along with all the fresh vegetables make this a healthy breakfast dish that is great for brunch or any breakfast occasion.
Ingredients
- 1 carton egg substitute
- 1 pound fresh spinach
- 1 pound turkey bacon
- 1 yellow onion, chopped
- 1 carton fresh mushrooms, sliced
- 1/2 cup shredded mozzarella cheese
- 1/4 tsp Mrs. Dash Italian
- 1/8 tsp pepper
- 4 tbsp low fat low calorie butter

Method
Fry turkey bacon and place on paper towels to drain. Crumble and set aside. Melt 2 tablespoons butter in a pan. Saute mushrooms and onions with 1/8 teaspoon Mrs. Dash in pan until light brown. Remove from pan, mix with bacon, and set aside. Melt 2 tablespoons butter in a pan. Saute spinach and 1/8 teaspoon Mrs. Dash in pan until withered. Mix with onion, mushrooms and bacon mixture then set aside. Spray a skillet with nonstick spray. Pour 1/2 cup egg substitute into pan and move pan around until egg fills bottom of pan. Place 1/4 cup spinach, onion, mushroom and bacon mixture on one half of egg. Sprinkle mozzarella cheese on top of vegetable mixture. Fold empty half of egg over top of mixture. Cook until bottom is lightly browned. Turn omelet over and cook until light browned on both sides. Repeat until all omelets are complete. Top with cheese and fresh tomato.
