Spicy Nut Cookies

Finely ground walnuts or pecans are combined with brown sugar Splenda, spice, rum extract and egg whites in these flour-free cookies.
 

Ingredients

  • 2 cups walnuts or pecans
  • 2 egg whites
  • 1 Tbsp. apple or pumpkin pie spice
  • 1/3 cup Splenda brown sugar replacement
  • 1 tsp. rum extract

Method

Process nuts in a food processor until finely ground. Mix with Splenda and spice. Beat egg whites and flavoring until stiff. Fold in ground nut mixture. Roll into balls; place on cookie sheet that has been sprayed with butter-flavored cooking spray. Bake about 15 minutes at 350 degrees F.

 

Notes: Bet you can't eat just one.

 

Number of Servings: Makes about 2 dozen
