Spanish Eggs

A mixture of beaten eggs, salsa and cooked onion is scrambled and sprinkled with cheddar-Monterey jack cheese for this quick-fixing breakfast or brunch recipe.
 

Ingredients

  • 1/2 Cup Onions
  • 8 Eggs, beaten
  • 1/4 cup Salsa
  • 1/2 Cup Grated Chedder-Jack Cheese

Method

Saute onions in a little oil in a nonstick skillet until translucent. Mix together eggs and salsa in bowl. Add to onions. Scramble the eggs. Sprinkle with cheese; serve with your favorite breakfast meat.
