Southwestern Breakfast Wraps

A salsa blend of tomato, cilantro, onion and jalapeno is prepared and used to season scrambled eggs, which are roll up in flour tortillas along with cheddar cheese.
Ingredients
- 1 medium tomato, cored and cut up
- 1/8 cup (2 Tbsp.) chopped cilantro
- 1/4 of a medium onion, cut up
- 6 jalapeno pepper rings (or "hotness" of your choice)
- 4 large eggs
- 4, 8-inch soft flour tortillas
- 1/2 cup shredded cheddar cheese

Put in food processor: tomato, cilantro, onion and jalape?o rings. Pulse all ingredients until a chunky salsa mixture forms. Whisk eggs; pour into large frying pan set on medium heat. When eggs begin cooking, pour in desired amount of the food processed salsa. Continue to stir gently over medium heat until eggs are completely cooked. Spoon about 1/3 cup of egg mixture onto each tortilla. Sprinkle cheese over egg mixture and roll it all up. Any extra salsa mixture can be used for dipping.
Notes: This breakfast is fast and healthy. Salsa can be made in bulk a couple of days in advance to make breakfast cooking even faster.
