Sausage & Egg Casserole

Pork sausage, cheese, eggs and veggies are combined in a baking dish, for a casserole that uses crunchy coleslaw mix instead of the usual potatoes.
 

Ingredients

  • 1 pound bulk pork sausage, browned and drained
  • 6 eggs, beaten
  • 2 cups shredded cheese
  • 1 cup shredded coleslaw mix (cabbage and carrot)
  • 1/4 cup seasoning blend (onion, celery, pepper and parsley)
  • Dash of bottled hot sauce

Method

Mix all ingredients and put into a 9"x13" baking dish. Bake at 350 until lightly brown. Cut into squares to serve. (Can be prepared the night before and refrigerated until ready to bake.)

 

Notes: Coleslaw mix makes a great low-carb substitute for hash browns in this breakfast casserole.
