Roasted Pork Tenderloin over Roasted Vegetable

This dish is all about the flavors of fall. The vegetables are fennel and onion and they are roasted with apples. What a fresh dish.
 

Ingredients

  • 1 pork tenderloin
  • 1/2 cup olive oil
  • 1 cup parsley
  • 2 cloves garlic
  • 1 sprig fresh thyme, leaves pulled off
  • 2 tsp salt
  • 2 tsp pepper
  • 2 Granny Smith apples, cored, skinned and sliced
  • 1 fennel bulb, sliced
  • 1 sweet onion, sliced
  • 2 cups apple cider
 
Method

In a blender, mix oil, thyme, garlic, parsley and half of the salt and pepper. Rub all over pork tenderloin. Mix remaining ingredients in a baking dish. Place tenderloin on top and bake in a 400 degree oven for 10 minutes. Lower heat to 350 degrees and cook 20 minutes or until pork reaches 160 degrees. Remove and let rest 8 minutes. Slice into medallions and place in center of plate. Ladle vegetable mixture on top of pork and serve.
