Quick Quiche

This quiche uses both whole eggs and egg whites, and adds cooked meat, cheese, sour cream, Tabasco, spinach and mushrooms.
Ingredients
- 6 extra large eggs
- 6 extra large egg whites
- 8 oz shredded sharp cheese
- 4 oz feta cheese (optional)
- 4 oz sour cream (about 1/2 cup)
- 2 tsp bottled hot pepper sauce
- 1-2 tsp salt
- 1-2 tsp pepper
- 3/4 cup frozen spinach (cook in microwave 40 seconds & squeeze out liquid to drain)
- 1 cup chopped cooked turkey (or ham or cooked turkey bacon)
- 8 oz fresh mushrooms, chopped
- 1 small onion, chopped
- Oil
- Melted butter

Slightly beat 6 whole eggs and 6 egg whites, add cheese, sour cream, salt, pepper, & hot sauce. Mix well. Saute onions and mushrooms in a little oil. Add spinach, meat, onions & mushrooms to mixture. Pour into 2 pie shells (I bake the pie shells approx. 5 minutes before adding mixture.) Cook in 375 degree oven for approximately 40-45 minutes or until toothpick comes out clean. Brush top with a little melted butter.
Notes: I make a variety of quiches and they have always been a hit. I use leftover holiday turkey and ham and also make a veggie quiche. My favorite is the spinach and mushroom. The hot sauce adds a little pizazz!
