Quiche for Comfort

This rich quiche is made with whipping cream, mixed with eggs, and poured over diced ham, sweet peppers, crumbled bacon, cheddar cheese and mustard in a pie shell.
 

Ingredients

  • 9-inch unbaked pie crust
  • 8 slices bacon, cooked crispy & crumbled
  • 1 1/4 cups ham cut in small cubes
  • 1/4 cup diced green bell peppers
  • 1/4 cup diced red bell peppers
  • 1 1/2 cups shredded cheddar cheese
  • 8 eggs
  • Salt & pepper
  • 1/2 teaspoon mustard
  • 1 1/4 cups heavy whipping cream

Method

Place pie crust into pie dish and flute edges. In the bottom of pie crust sprinkle diced ham, red & green peppers, bacon, and cheese. In a large bowl whisk the eggs with salt & pepper to taste, mustard, and the whipping cream. Carefully pour into the pie crust. Place pie dish onto a baking sheet with tin foil on it for any run over. Bake uncovered in 350 degree oven until center is set (about 50-55 minutes). If quiche is beginning to get too brown and center is not completely set, place in microwave the last 5-8 min to finish cooking.

 

Notes: For added variety, cooked and crumbled sausage or diced green onions can be used. You can also top with a salsa and sour cream. This is good leftover the next day also.
