Mock Potato Salad

A low carb solution for your next picnic--just substitute caulifower for potatoes.
 

Ingredients

  • 1 head cauliflower
  • 1 small red onion, finely chopped
  • 3 eggs, hard boiled
  • 1/4 cup finely chopped pickles
  • 1/4 cup finely chopped olives (optional)
  • 3 Tbsp mustard
  • 1/4 cup mayonnaise
  • 1 tsp dill weed
  • Salt and pepper to taste

Method

If using fresh cauliflower, remove stems and heart, divide into bite sized pieces. Steam until tender and place in large bowl. Add remaining ingredients. Toss well to coat.

 

Notes: This is a lower carb version of the real thing. Frozen cauliflower can be used to cut down on prep time.
