Mini Omelets

These mini omelets are great for brunch and are very easy to personalize with your favorite ingredients.
 

Ingredients

  • 4 eggs
  • 1/4 cup milk
  • 1/8 cup chopped onions
  • 1 tsp Parmesan cheese
  • 1/2 tsp parsley flakes
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • Shredded cheddar cheese

Method

Preheat oven to 325 degrees. Grease a muffin pan and set aside. In a medium bowl, lightly beat eggs and milk together. Add remaining ingredients except shredded cheese. Using a 1/4 cup measuring cup, scoop egg mixture into muffin pan. Fill each to about 1/2 full, and then sprinkle shredded cheese over egg mixture and bake in oven for 12-15 minutes. Cool about 2 minutes before serving.
