Maui Scramble

This light breakfast will start your day with an island twist-scrambled eggs served with grilled pineapple and bacon.
 

Ingredients

  • 4 eggs
  • 4 strips of bacon
  • 1/2 cup Swiss cheese, cubed
  • 1 cup pineapple, cut into triangles
  • 2 Tbsp unsalted butter
  • 1 Tbsp milk
  • Salt
  • Pepper
 
Method

In a large pan, preferably a cast iron skillet, heat 1 tbsp unsalted butter. Add pineapple slices, and grill for 1-2 minutes. Add 4 strips of bacon to the pineapples. Turn heat to low and grill, using a spatula to move the ingredients around. Crack eggs and place yolks and whites into a clean bowl. Whisk for about three minutes. Add cheese and milk. Whisk for 1 minute. Add 1 tbsp unsalted butter to a second pan or skillet. Add eggs, cheese, and milk. Scramble. When the eggs have cooked, place them on a plate and top with the grilled pineapple and bacon.

 

Notes: This makes a light and exotic breakfast. I usually eat this with my husband on a summer weekend morning.
