Luscious Low-Carb Lasagna

Low-carb lasagna noodles are layered with a mixture of ground turkey, mushrooms & spaghetti sauce, and a blend of 3 cheeses plus basil.Ingredients
- 1 box low-carb Lasagna noodles (I like Dreamfield brand)
- 1 lb ground turkey
- 1 onion, chopped
- 1 can mushrooms
- 1/2 tsp oregano
- 1/2 tsp basil
- 1 tsp garlic powder
- 1 23.5 oz jar spaghetti sauce
- 2 lbs. ricotta cheese
- 2 cups shredded mozzarella, divided
- 1/2 c. grated Parmesan cheese
- 1/4 c. fresh basil leaves (chopped)

Boil lasagna according to package directions. Drain, set aside. Meanwhile, saute onion, turkey and mushrooms until turkey is done (about 8-10 minutes). Drain any grease. Add spaghetti sauce, herbs and spices (oregano, basil and garlic powder); mix and set aside. In a separate bowl, combine ricotta, 1 1/2 cups of the mozzarella, Parmesan and basil leaves. Spray 9x13" baking dish with cooking spray. Layer lasagna noodles, cheese mixture, and sauce mixture, repeating 2 or 3 times. Top with reserved mozzarella. Bake at 350 for 45 minutes.
Notes: This lasagna is absolutely scrumptious and a real treat for low-carb living. It just proves that you CAN eat pasta again!
