Low Carb Chicken and Veggies

Chicken with broccoli, cauliflower, onions and mushrooms in a creamy cheedar cheese sauce.
 

Ingredients

  • 1 Tbsp olive oil
  • 2 chicken breasts
  • 1 clove garlic
  • 1/2 onion (sliced)
  • 1/2 head of broccoli (chopped)
  • 1/2 head cauliflower (chopped)
  • 1 small can mushrooms (drained)
  • 1 cup shredded cheddar cheese
  • 1/2 stick butter

Method

Cut chicken breasts into small bite size pieces and brown in skillet on medium heat in 1 tbsp olive oil and set aside. In large bowl add broccoli and cauliflower, 1 clove garlic-crushed, 1/2 onion, mushrooms. Add chicken and mix thoroughly. In 9 x 12 glass dish, spray bottom only. Add 1 layer of veggie and chicken mix, top with 1/2 cup of cheese and dot with 1/4 cup butter. Layer rest of veggies, and repeat with cheese and butter. Bake at 400 degrees for 20-30 minutes until cheese is melted and brown.

 

Notes: I add a tossed salad and low carb bread.
