Lamb shanks are oven baked in a tomato and wine sauce seasoned with garlic, herbs and spices and white truffle oil.
Rub lamb shanks with olive oil and sear them in frying pan until browned.
In a 4-quart roasting pan with a lid, combine all other ingredients including spices. Place seared shanks in roasting pan and cover with mixture.
Place lid on roasting pan and bake lamb shanks slowly at 325 degrees for 2 hours then turn shanks over and continue baking for another 1 1/2 hours, until meat is loose on bone. Total baking time is about 3 1/2 hours.
Notes:
Serve with rice and French bread.
