Lamb Shanks


Lamb shanks are oven baked in a tomato and wine sauce seasoned with garlic, herbs and spices and white truffle oil.



Ingredients:

  • 4 lamb shanks
  • 1, 14 1/2 oz. can diced tomatoes
  • 1, 8 oz. can tomato sauce
  • 1/4 cup dry red wine
  • 2 cloves garlic, coarsely chopped  
  • 2 tablespoons olive oil
  • 1 tsp basil
  • 1 tsp oregano
  • 1 tsp parsley
  • 1 tsp paprika
  • 1 tsp sugar
  • 1 tsp thyme
  • 1 tsp white truffle oil
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • Juice of one lemon wedge

Method

Rub lamb shanks with olive oil and sear them in frying pan until browned. In a 4-quart roasting pan with a lid, combine all other ingredients including spices. Place seared shanks in roasting pan and cover with mixture. Place lid on roasting pan and bake lamb shanks slowly at 325 degrees for 2 hours then turn shanks over and continue baking for another 1 1/2 hours, until meat is loose on bone. Total baking time is about 3 1/2 hours.

Notes: Serve with rice and French bread.
