Kerala-style Indian Lamb

Cubes of lamb are simmered in a mixture of pureed fresh tomatoes, curry powder, scallions, lemon juice and optional curry leaves. Cooked rice is stirred in just before serving.
 

Ingredients

  • 2 tomatoes
  • 2 tsp curry powder
  • 2 diced scallions
  • 6 fresh curry leaves, if available
  • 2 tsp lemon juice
  • 1/4 cup vegetable oil
  • 2 lbs diced lamb
  • 2 cups water
  • 1 cup cooked rice
  • 1 tbsp minced parsley

Method

Puree tomatoes in a blender. Fry curry powder, scallions, curry leaves (optional), and lemon juice in hot oil for two minutes, stirring well. Add pureed tomatoes; stir and cook for one minute on medium heat. Add lamb and water; simmer for 25 minutes, stirring once in a while. Add cooked rice, and simmer three more minutes. Stir well. Garnish with parsley. Serve hot.
