A 10-inch pie plate is lined with refrigerated pie crust and filled with pieces of precooked breakfast sausage patties, sprinkled with shredded Mexican-blend cheese and topped with beaten egg.

Preheat oven to 350 degrees. 1. Thaw and pat the pastry dough into a deep dish 10-inch pie plate or pan. Refrigerate till ready to use. 2. Remove sausage patties from package and cut into approx. 1/2-inch dice. Sprinkle onto pie crust in the pan. 3. Sprinkle the shredded cheese onto the sausage and pour the beaten egg on top. 4. With a large fork very gently mix the ingredients just slightly, taking care not to tear the crust. 5. Bake at 350 degrees for 40 minutes. Check doneness with knife inserted into the center. Knife should come out clean, otherwise cook another five minutes and check again till done.
This quiche is delicious and will keep for days in the refrigerator. My husband cuts a piece for his breakfast everyday so I can sleep an extra few minutes! You can substitute chopped ham for the sausage and it is equally delicious.
