Healthy Brunch Casserole


This easy and healthy recipe is perfect for a hearty early morning breakfast or a great addition to a brunch.



Ingredients:

  • Eggbeaters= 15 eggs
  • 6 slices light whole wheat bread
  • 1 cup chopped broccoli
  • 1/4 cup onions, chopped
  • 1/4 cup green pepper, chopped
  • 1/2 mushrooms, chopped
  • 1/2 lb ham (low salt) cut in small 1/4 inch squares
  • 1 cup fat free cheddar cheese shredded
  • 1/2 cup milk
  • 2 tbsp mustard

Method

Place broccoli, onions and green pepper in microwave and cook until crisp tender, about 3 minutes. Then, add mushrooms to the bowl. In a 9X13 non-stick or greased pan place a layer of bread 3 slices cut into bite sized pieces. Top with a third veggies, ham and cheddar cheese. Repeat layers, saving some cheese for the top. Then, beat eggs and mustard and pour over the layered mixture and top with remaining cheese. May set in refrigerator for a few hours or overnight if desired. Bake at 350 for about an hour. Check after 45 minutes. It is done when a knife placed in the center comes out clean. Let set a few minutes before cutting. Cut into 12 squares. If desired top with sauce of healthy mushroom soup, make slightly thick with 1/2 can skim milk.

Notes: This raises like a souffle and becomes golden brown . It is so easy to prepare the night before. it is a healthy low cal, low carb meal that everyone can eat and enjoy.
