Grilled Chicken with Balsamic Tomatoes

Although this dish is quick and simple to prepare, the flavors are complex and wonderful. Oregano, spinach and basil combine perfectly with the balsamic.
Ingredients
- 4 6 oz boneless skinless chicken breasts
- 1 1/2 teaspoons salt, divided
- 3/4 teaspoon coarsely ground black pepper, divided
- 2 tablespoons extra virgin olive oil
- 1 dry quart cherry or grape tomatoes, cut in half
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried oregano
- 12 ounces baby spinach, washed and dried
- 1/2 cup fresh basil leaves, washed, dried and chopped

Pound chicken breasts, between plastic wrap, to 1/4 inch. Sprinkle breasts with 1 teaspoon salt and 1/2 teaspoon pepper. Preheat grill pan or outdoor grill to medium hot. Cook chicken 3-4 minutes per side, or until juices run clear. Heat olive oil in large skillet. Add tomatoes, vinegar, oregano, remaining salt and pepper. Cook about 2 minutes, or until tomatoes have just softened then stir in spinach and basil, and cook another minute until spinach wilts. Distribute vegetables evenly over 4 plates. Carve chicken breasts into thin slices and arrange on top of tomatoes and spinach.
