Grandma's Purple Eggs


These hard cooked eggs are turned a purple color with the addition of beet juice and vinegar. The flavors also include onion, horseradish, garlic salt and dry mustard.



Ingredients:

  • 6 Hard cooked eggs
  • 1 can red beets with juice
  • 1 medium onion sliced
  • 1/2 c white vinegar
  • 1 tblsp prepared horseradish
  • 2 teasp garlic salt
  • 1/2 teasp dry mustard

Method

Peel the cooked eggs. Mix rest of ingredients with the beet juice. Put eggs into large container with lid. Add beets and onion; pour liquid over all. Put into refrigerator for at least 1 week before eating. Will last several weeks in refrigerator. Also makes pretty deviled eggs.

Notes: Can reuse the vinegar base (keep chilled) to make another batch within a few weeks.
