Garlic-lemon Shrimp Salad

Cooked shrimp, romaine, spinach and green onion are tossed together and flavored with a dressing that has garlic paste, lemon juice and peel, and pepper.

Ingredients:

1 Tbsp Garlic Paste
3 Tbsp Lemon Juice
2 Tbsp Apple Juice
2 tsp Grated Lemon Zest
1 tsp Minced Fresh Parsley
½ tsp Ground Black Pepper
3 Tbsp Butter
24 Medium Shrimp, peeled, deveined and cooked
2 cups Shredded Romaine Lettuce
1 cup Lightly Packed Baby Spinach Leaves
¼ cup Diced Green Onion
Lemon Slices
Grated Parmesan Cheese

Directions:

Whisk together garlic paste, lemon juice, apple juice, lemon zest, parsley and pepper in a small bowl. Melt butter with the garlic mixture in a large skillet over medium heat, watching for splatters. Once butter-garlic mixture is warm, add shrimp to skillet and heat about 1 minute in mixture. Remove skillet from heat; set aside.

Toss together Romaine lettuce, spinach leaves and green onions in a medium mixing bowl. Add shrimp and skillet drippings, then lightly toss all together. Garnish with a slice of lemon and a light sprinkle of grated Parmesan cheese.
