Garlic, Bacon & Mushroom Roasted Leg Of Lamb

A whole leg of lamb is topped with garlic, onion, bacon strips and portabella mushrooms, then oven-roasted.
Ingredients
- 1 Cup Water
- 2 Tbsp Soy Sauce
- 2 Tbsp Worcestershire Sauce
- 2 Tbsp Minced Garlic In Olive Oil
- 1 Tbsp EACH Salt and Pepper (or to taste)
- 1 4 lb. Whole Leg Of Lamb
- 1 4.5 oz Jar Minced Garlic In Olive Oil To Rub On Lamb
- 1 Large Sweet Onion, Diced
- 1 Package Bacon
- 1 Package Sliced Baby Portabella Mushrooms
- Mint Jelly (optional)

Method
Preheat oven to 450 degrees. Combine water, soy sauce, Worcestershire, minced garlic, salt & pepper. Pour into roasting pan. Place leg of lamb on a rack in pan. Rub the top and sides of lamb with minced garlic in olive oil. Press onion onto top of lamb, adding any extra to the mixture in the pan. Use enough of the bacon strips to cover the top of the lamb. Add one layer of mushrooms on top of bacon strips, adding extra to the mixture in pan. Insert meat thermometer into thickest part of lamb, away from the bone. Cover lamb loosely with aluminum foil. Bake for 15 minutes at 450 degrees. Reduce heat to 350 degrees and cook until center of lamb reaches 145-150 degrees for medium-rare or 160-170 degrees for well done. Serve with Mint Jelly, if desired.
