Easter Quiche

If you have leftovers from Easter or are just looking for a great brunch treat, these mini quiches are the way to go.
 

Ingredients

  • 1 cup egg substitute
  • 1/2 cup skim milk
  • 1/2 cup diced ham
  • 1/2 cup bite sized asparagus pieces, cooked al dente
  • 1/4 cup Parmesan cheese
  • 1/4 tsp each salt and pepper

Method

Preheat over to 350 degrees F. Coat muffin pans with non-stick spray. Beat egg substitute for a minute with fork or whisk. Add remaining ingredients and blend well. Fill muffin tins half way. Bake for 15 minutes or until set.

 

Notes:

 

Number of Servings: 12 quiches, depending on muffin size
