Decadent Chicken Enchiladas

This rich baked dish has cooked chicken mixed with cream cheese & mild chilies, wrapped up in tortillas, and covered with cream & Jack cheese.Ingredients
- 1 pkg of 8- to 10-inch flour tortillas
- 1 8-oz pkg. cream cheese, softened
- 1 small can chopped mild green chilies
- 1 tbsp beau monde seasoning (or to taste)
- Nutmeg
- Cooked and chopped chicken, about 3 cups
- 1 Pint heavy whipping cream
- 12 oz shredded Jack cheese

Method
Mix chicken, cream cheese, chilies and beau monde seasoning. Soften mixture with a small amount of cream. Spoon mixture onto tortillas, roll up and arrange in a baking dish. Cover enchiladas with remaining cream. Sprinkle with shredded cheese and sprinkle with nutmeg. Bake at 350 until cheese is bubbly and lightly browned.
Notes: Avoid the traditional Mexican side dishes like beans and rice that will overpower this dish. Goes best with tossed salad or fresh fruit.
