Curried Lamb and Chickpeas

This dish can easily be the entire meal. Curried lamb and perfectly seasoned chickpeas served over a nutty brown rice for a traditional meal.
Ingredients
- 1/2 lb lamb, cooked and cut into bite size pieces
- 1 tsp extra virgin olive oil
- 1 tsp rice wine vinegar with garlic
- 1 tsp roasted garlic, minced
- Chickpeas, undrained
- 2 tsp yellow curry powder
- 1/2 tsp sea salt
- 1/2 tsp ground black pepper
- 1 can chicken broth
- 2 cups instant brown rice

Method
Heat olive oil and vinegar in a skillet on medium high. Add garlic and saute one minute. Add chickpeas to skillet. Add curry powder, salt and pepper. When it comes to a boil, reduce heat to a simmer. Cook until chickpeas are soft enough to mash with a fork. Add lamb and turn heat to medium. Stir 3-4 minutes then reduce heat to simmer. Brown Rice: Bring broth to a boil and add a cup of rice. Reduce heat to low and cover. Let simmer about 10 minutes.
