Crustless Quiche Lorraine

Crumbled bacon, Swiss cheese and minced vegetables are sprinkled in a pie plate and topped with an egg & cream mixture for this quiche.
 

Ingredients

  • 1 pound bacon, fried until crisp and crumbled
  • 1 cup shredded Swiss cheese
  • 1/4 cup minced seasoning blend (onion, celery, pepper and parsley)
  • 4 eggs
  • 2 cups heavy whipping cream
  • 1/2 tsp. celery salt
  • 1/8 tsp white pepper
  • 1/8 tsp. cayenne pepper

Method

Heat oven to 450 degrees. Sprinkle crumbled bacon, cheese and seasoning blend in the bottom of a 9-inch pie plate. Beat eggs with remaining ingredients. Pour over mixture in pie pan. Bake in preheated oven for 15 minutes. Reduce oven temperature to 350 degrees F and bake 20 to 30 minutes, or longer or until a knife inserted in center comes out clean. Let stand 10 minutes before cutting to serve.

 

Notes: This is a great brunch or luncheon dish.
