Chicken Caesar Salad Wrap

Chopped cooked chicken is combined with romaine, tomatoes, onion, cheese and basil, seasoned with vinegar, and rolled in lavosh or tortillas.
 

Ingredients

  • 1 small head romaine lettuce, chopped
  • 2 ripe tomatoes, chopped
  • 1 small red onion, thinly sliced
  • 1/2 cup fresh basil leaves, finely chopped
  • 2 cooked chicken breast halves--diced or shredded
  • 1/2 cup grated parmesano-reggianno cheese
  • 1 tablespoon Balsamic vinegar
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • 2 lemon wedges
  • 2 pieces whole wheat lavosh wrap or whole wheat tortillas

Method

Mix all vegetables, chicken and cheese in a large bowl. In a small cup mix vinegar, garlic, salt and pepper; pour into vegetable bowl. Mix well. Using tongs, place half of the mixture on each wrap. Drizzle lemon juice on each. Wrap and eat.
