Broiled Parmesan Tilapia

Tilapia filets are broiled and topped with a coating of Parmesan, butter, mayo, lemon juice and other seasonings for a low-carb entree.

Ingredients
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter, softened
  • 4 tablespoons reduced-fat mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon minced garlic
  • 1 teaspoon minced fresh basil
  • 1 teaspoon Old Bay seasoning
  • 1/4 teaspoon black pepper
  • 2 lbs tilapia filets
 
Method

Set oven to broil. Grease rack of broiler pan; line pan with foil and grease foil lightly. In a small bowl, mix together Parmesan cheese, butter, mayonnaise, lemon juice and garlic. Stir in remaining seasonings; set aside. Arrange filets in a single layer on prepared pan. Broil a few inches from heat for 3-4 minutes. Spread on topping. Return to oven and broil 3-4 minutes more or until topping is browned and fish flakes easily.

 
Notes:

If your family is picky about eating fish, they will change their minds when they try this dish. The Parmesan coating will win them over to loving this mild and flaky fish. Serve with mashed cauliflower and a green salad for a complete low-carb meal which the whole family will love.
