Broccoli, Bacon and Leek Quiche

Chopped broccoli, leeks, bacon, Swiss and goat cheeses are combined with the eggs and cream in this quiche recipe.
 

Ingredients

  • Butter flavored cooking spray
  • 2 cups broccoli, finely chopped
  • Salt and freshly ground pepper to taste
  • 2 teaspoons butter
  • 2 pounds leeks, quartered lengthwise, washed, and finely chopped
  • 1/2 pound bacon, crisp-cooked and crumbled
  • 3 eggs, lightly beaten
  • 1/2 cup heavy whipping cream
  • 1 teaspoon spicy brown mustard
  • 2 ounces low-fat goat cheese, crumbled
  • 1/2 cup shredded Swiss cheese

Method

Preheat the oven to 375 degrees F. Lightly spray 9-inch pie plate with butter-flavored cooking spray. Line the pie plate with the broccoli. Season with salt and freshly ground pepper to taste. Melt butter in a 10-inch nonstick skillet. Add leeks; cover, and sweat the leeks for 5 minutes; remove from heat. Combine bacon, eggs, cream, mustard, and goat cheese. Add leeks. Pour over broccoli. Sprinkle with Swiss cheese. Bake for 45 minutes, or until set. Serve warm.

 

Notes: This is a great brunch dish.
