Bacon-Blue Cheese Soup

Pieces of cooked bacon combine with flour-thickened chicken broth and cream or milk. A generous amount of blue cheese is added and melted into the soup.
 

Ingredients

  • 8 strips bacon, cut crosswise into pieces
  • 2 tablespoons unsalted butter
  • 3 tablespoons flour
  • 3 cups chicken broth
  • 1 cup cream or milk
  • 8 oz blue cheese, crumbled (2 cups)

Method

Fry bacon in a Dutch oven until crisp. Spoon out grease. Add butter to pot and melt, stirring constantly. Add flour and whisk to form a roux. Slowly add chicken broth, whisking constantly, and bring to a boil. Reduce heat and simmer 5 minutes, or until thickened. Add cream or milk and heat through. Slowly add cheese and cook over low heat until melted.

 

Notes: This hearty, cold day soup needs no seasoning. The smoky flavor of the bacon and the tang of blue cheese make for a full-flavored, rib-sticking meal!
